The typical products of Ragusa
They are predominantly of agricultural origin and are still produced following the ancient farming traditions. Among the typical products that make the iblea area known in the world, there is undoubtedly the cheese “Ragusano Dop”. It is one of the oldest cheeses in Sicily. In fact, there are testimonies of it in the Island since the 1500s. It has an aromatic, slightly spicy flavor and is particularly used in the preparation of typical dishes of Sicilian gastronomy.
Even our wines enjoy particular fame. In particular the “Cerasuolo di Vittoria”. It is a red wine of ancient tradition, with a strong and decisive flavor. It was born from the union between the strength of “Nero d’Avola” and the sweetness of “Frappato”. The latter is a vine that is produced only in an area between the province of Ragusa and those of Catania and Caltanissetta.
The kitchen
The kitchen is genuine and tasty and there is something unique in the dishes of the Ragusa cuisine. Among the most famous dishes there are, undoubtedly, the “Focaccia Ragusana”: thin sheets of flour dough seasoned in various ways. The best known are those with tomato and cheese ragusano dop. Another typical product is the pork. The stuffed ribs, sausage and jelly are very common in local butcheries. Moreover, with the pork are prepared the famous ricotta ravioli!
