Goat breeding and iblea cuisine – between nature and taste!

“Goats and Cabbages“, this is the name of a fantastic day dedicated to contact with animals and the genuineness of the flavors of the past!

We will take you to visit the Tenuta Carbonara and Agrosì companies to learn about organic farming methods, goat breeding and the secrets of typical iblean cuisine! Ready? It starts!

The day is divided into three moments:

  1. Grain Farm with a visit to the goat breeding, walk, milking and tasting; 
  2. Agriturismo Tenuta Carbonara, outdoor cooking course, lunch, siesta among the trees; 
  3. Visit to the BIO vegetable garden with notes on organic farming techniques, swimming in the pool and aperitif.

Agriturismo Tenuta Carbonara

It is located in the heart of the Iblei mountains, on the border between the towns of Ragusa, Modica and Rosolini. This organic agro-biotechnical company covers about 50 hectares and it is here that the wheat is grown which, in part, is transformed into flour for the production of bread, fresh pasta and focaccia.The fields are also used for the production of feed forage intended to feed the company’s cattle. Thanks to the excellent grass, the cows give an exceptional milk both under the organoleptic-nutritional profile and as raw material for the production of dairy products among which it is obligatory to mention the ricotta and the typical local cheeses. In this oasis of uncontaminated nature, there are also: lush carob trees – the fruits of these trees, the carobs, are used in the preparation of artisan products (such as aromatic juices) and in the production of carob flour (with which delicious biscuits are prepared); olive trees that give a very tasty and light oil; almond trees and pear trees.

Azienda Agricola Agrosì

This farm covers about 70 hectares and boasts, in addition to arable land, about 2000 trees of ancient olive trees. Here goats are bred with fresh milk and without undergoing any heat treatment, they are sent to the company’s dairy. The milk is then processed raw for the production of toma, caciotta, crescenza and many other delicacies such as robiola and goats. fresh and seasoned. Agrosì is a natural laboratory, equipped to produce at very high quality levels also olive oil, typical products, distal barley, spelled, vegetables and fruit.

DETAILED PROGRAM OF THE DAY

  • 9:30 am arrival at the grain farm, welcome from the staff and historical notes on the territory for a return to the origins;
  • 10:00 am walk in the fields with the flock;
  • 10:30 am milking of goats and visit to the stables where they will be fed;
  • Tasting of cheeses a glass of good wine from Val di Noto; 
  • 11:30 am arrival at Tenuta Carbonara and start of the cooking course held by Mrs. Nello – chef and owner of the farm – during which we will learn how to prepare the typical dishes of the Sicilian tradition;
  • 1.30 pm lunch with food prepared during the course;
  • 3:00 pm short siesta in the garden or under the trees;
  • 3.30 pm departure for the visit to the organic vegetable garden; 
  • 16:00 start of the journey with explanation of the techniques of cultivation of vegetables without additives  – Walk between the olive trees and carobs 6:00 pm swimming pool and aperitif;
  • 6:00 pm swimming pool and aperitif

COSTS

  • From 2 to 4 partecipants: euro 100,00 per pax
  • From 5 to 10 partecipants: euro 95,00 per  pax
  • From11 to 20 partecipants: euro 90,00 per pax
  • From 20 to 35 partecipants: euro 85,00 per  pax
